Method

Cooking the Prime Filet

    Prepare the Fillet

    Season the filet mignon with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the fillets for 3-4 minutes on each side for medium-rare. Add fresh herbs in the last minute of cooking.

    Rest the Meat

    Remove the fillets from the skillet and let them rest for 5 minutes before serving.

Making the Potato Pavé

    Prepare the Potatoes

    Slice the potatoes thinly and layer them in a baking dish. Mix melted butter, heavy cream, salt, and pepper, and pour over the potatoes.

    Bake the Potatoes

    Cover with foil and bake at 375°F (190°C) for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown.

    Cool and Slice

    Allow the pavé to cool slightly before slicing into squares.

Cooking the Carrots

    Prepare the Carrots

    Peel and cut the carrots into sticks. In a pan, melt butter and honey, then add carrots and sauté for 5-7 minutes until tender. Season with salt.

Making the Mustard Jus

    Prepare the Jus

    In the same skillet used for the fillets, add red wine and bring to a simmer, scraping up any browned bits. Add beef stock and Dijon mustard, then simmer until reduced by half. Season with salt and pepper.
