Kibbeh Mixture

Method

Prepare Kibbeh

Soak Bulgur

In a bowl, combine the fine bulgur wheat with hot water. Let it soak for about 30 minutes until the bulgur is soft and has absorbed the water.

Mix Ingredients

In a large bowl, combine the soaked bulgur, ground lamb or beef, chopped onion, toasted pine nuts, cinnamon, allspice, salt, pepper, mint, and parsley. Mix well until all ingredients are thoroughly combined.

Shape Kibbeh

Shape the mixture into small oval or round patties, pressing firmly to hold their shape.

Prepare Tomato Topping

Mix Tomatoes

In a separate bowl, combine the sliced heirloom tomatoes with olive oil, balsamic vinegar, sea salt, and basil leaves. Toss gently to coat the tomatoes.

Toast Bread

Toast Pita

Brush the pita bread or flatbread with olive oil. Toast in a skillet or oven until golden brown and crispy.

Assemble

Combine and Serve

Place the kibbeh patties on a serving platter. Top with the heirloom tomato mixture and serve alongside the toasted pita bread.
