Burger Preparation

    Form the Patties

    In a bowl, gently mix the dry-aged ground beef with salt and black pepper. Form into two equal-sized patties.

    Cook the Patties

    Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side or until desired doneness. Place a slice of white cheddar on each patty during the last minute of cooking to let it melt.

    Toast the Buns

    Toast the brioche buns on the grill or in the skillet until golden brown.

Bourbon Onion Preparation

    Cook the Onions

    In a skillet over medium heat, melt the butter. Add sliced yellow onion and sauté until translucent, about 5-7 minutes.

    Add Bourbon and Sugar

    Stir in the bourbon, brown sugar, and salt. Cook until the mixture thickens and the onions are caramelized, about 10-15 minutes.

Fries Preparation

    Prepare the Potatoes

    Cut russet potatoes into uniform sticks. Soak them in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain and dry the potatoes, then fry in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Assembly

    Assemble the Burger

    Place the burger patty on the bottom half of the brioche bun. Top with bourbon onions and cover with the top bun.

    Serve with Fries

    Serve the dry-aged burger alongside the hand-cut fries.
