Prepare Chicken Schnitzel

Flatten the Chicken
Place chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.

Bread the Chicken
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with bread crumbs. Season each component with salt and pepper. Dip each chicken breast first in flour, then in egg, and finally coat with bread crumbs.

Fry the Chicken
In a large skillet, heat the olive oil over medium-high heat. Add the breaded chicken and fry for about 3-4 minutes on each side, until golden brown and cooked through. Remove from skillet and let it rest on paper towels.

Prepare Cucumber
Grate the cucumber and squeeze out excess water. This will help avoid a watery tzatziki.

Roast Cauliflower

Prepare Cauliflower
Preheat the oven to 425°F (220°C). Toss cauliflower florets with olive oil, salt, and black pepper.

Spread cauliflower on a baking sheet and roast for 20-25 minutes until tender and golden brown.
Assemble and Serve

Cut pita bread in half and fill with sliced chicken schnitzel, zhug, tzatziki, pickled mushrooms, and roasted cauliflower. Enjoy!
