Chickpea Panisse Preparation

    Cook the Mixture

    In a saucepan, bring the water to a boil. Gradually whisk in the chickpea flour and salt until smooth. Cook over medium heat, stirring continuously until thickened, about 5-7 minutes.

    Set the Panisse

    Remove from heat and pour the mixture into a greased 8x8 inch dish. Smooth the top with a spatula and let it cool at room temperature for at least 1 hour.

    Cut and Fry

    Once set, cut the panisse into bite-sized squares. In a skillet, heat olive oil over medium heat. Fry the squares until golden brown on all sides, about 3-4 minutes per side. Drain on paper towels.

Lemon Saffron Aioli Preparation

    Make the Aioli

    In a bowl, combine mayonnaise, lemon juice, saffron threads, minced garlic, and salt. Mix well until fully combined. Allow to sit for 10 minutes for flavors to meld.

Assembly

    Plate the Dish

    On a serving plate, place a chickpea panisse square. Top with a dollop of lemon saffron aioli and garnish with edible flowers.
