    Prepare the Vegetables

    Preheat your oven to 200°C (400°F). Clean and halve the Brussels sprouts, and chop the cauliflower into bite-sized pieces.

    Season and Roast

    In a large bowl, toss the Brussels sprouts and cauliflower with olive oil, salt, and black pepper. Spread them evenly on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.

    Prepare the Walnuts

    While the vegetables are roasting, toast the walnuts in a dry skillet over medium heat for about 5-7 minutes, stirring frequently until fragrant.

    Combine Ingredients

    Once the vegetables are done roasting, remove them from the oven and let cool slightly. Sprinkle the toasted walnuts and crumbled Goat Gouda over the top.

    Finish with Hot Honey

    Drizzle hot honey over the roasted brassicas and serve warm.
