Prepare the Slaw
In a large bowl, combine the shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix well and set aside to let the flavors meld.

Make the Batter
In another bowl, whisk together the flour, cornstarch, salt, black pepper, and baking powder. Gradually add the beer or sparkling water until the batter is smooth.

Fry the Fish
Heat vegetable oil in a deep skillet over medium-high heat. Dip each cod fillet into the batter, allowing excess to drip off, and carefully place in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Toast the brioche buns lightly. On the bottom half of each bun, place a piece of fried cod, followed by a generous scoop of the creamy slaw, a few slices of red onion, and pickles. Top with the other half of the bun.

Serve the Atlantic fish sandwich immediately with your choice of sides.
