Method

Cauliflower Gratin

1

Prepare the Cauliflower

Preheat the oven to 375°F (190°C). Steam the cauliflower florets until tender, about 5-7 minutes.

2

Make the Cheese Sauce

In a saucepan, combine heavy cream, minced garlic, salt, and black pepper. Heat over medium until warm, then whisk in Gruyère and Parmesan cheese until melted.

3

Assemble and Bake

In a baking dish, combine the steamed cauliflower and cheese sauce. Top with breadcrumbs and bake for 25-30 minutes or until golden brown.

Haricots Verts

4

Blanch the Beans

Bring a pot of salted water to a boil. Add haricots verts and blanch for 3-4 minutes until bright green. Drain and plunge into ice water.

5

Toss with Dressing

In a bowl, whisk together olive oil, lemon juice, salt, and black pepper. Toss the cooled beans in the dressing before serving.

Marinated Red Peppers

6

Roast the Peppers

Char the red bell peppers over an open flame or under a broiler until blackened. Place in a bowl, cover, and let steam for 15 minutes.

7

Prepare the Marinade

Peel the skin from the peppers, remove seeds, and slice. Mix olive oil, red wine vinegar, minced garlic, salt, and oregano. Marinate the peppers for at least 30 minutes.

Garlic-Peppercorn Vinaigrette

8

Mix the Vinaigrette

In a bowl, combine olive oil, red wine vinegar, minced garlic, crushed black peppercorns, and salt. Whisk until well blended.

New York Strip Steak

9

Prepare the Steak

Season New York Strip steaks with salt and black pepper on both sides. Let rest at room temperature for 30 minutes.

10

Cook the Steak

Heat olive oil in a skillet over medium-high heat. Add steaks and cook for 4-5 minutes on each side for medium-rare. Let rest before serving.
