Prepare Oven and Pan
Preheat the oven to 180°C (350°F). Line a 20 x 30 cm (8 x 12 in) baking sheet with parchment paper and lightly grease it.
Whisk eggs and sugar in a large bowl over a simmering water bath (or use an electric mixer) until the mixture is pale, thick and ribbon-like, about 4–6 minutes if whisking in a double boiler or 6–8 minutes with a mixer. Remove from heat.
Vanilla Mousse (Heart Center)
Bloom the gelatin: sprinkle 4 g gelatin over 20 ml cold water in a small bowl. Let sit 5–10 minutes until gelatin swelled.
Warm gently (microwave 5–8 seconds or over a bain-marie) until dissolved and set aside to cool slightly but not stiffen.
Place the white chocolate in a heatproof bowl. Warm the egg yolks and sugar gently over a bain-marie, stirring constantly, until warm to the touch (70°C/160°F is not necessary for safety here but the mixture should be hot) and the sugar has dissolved. Remove from heat and immediately pour over the white chocolate, stirring until melted and smooth. Add vanilla.
Stir in the dissolved gelatin until fully incorporated. Allow the mixture to cool to roughly room temperature (30–35°C) so it will not break the whipped cream.
Whip the 200 ml cold heavy cream to soft peaks. Reserve about 2–3 tablespoons for brushing the heart cavity edges if needed. Gently fold the whipped cream into the white chocolate mixture in two additions until smooth and airy.
Pour the vanilla mousse into a heart-shaped silicone insert or a small heart-shaped mold to form the heart center. Smooth the top, cover with plastic wrap, and freeze until firm (at least 2 hours, ideally overnight) so it can be unmolded and surrounded by chocolate mousse later.
Chocolate Mousse
Bloom the gelatin: sprinkle 8 g gelatin over 40 ml cold water in a small bowl. Let sit 5–10 minutes until swollen.
Place the chopped dark chocolate and butter in a heatproof bowl. Set aside.
Microwave the bloomed gelatin briefly (or warm over a bain-marie) until fully dissolved and fluid. Stir the dissolved gelatin into the chocolate mixture until homogenous. Let cool to about 35°C (warm but not hot).
Whip the 400 ml cold heavy cream to soft-medium peaks. Fold one-third of the whipped cream into the chocolate mixture vigorously to loosen it, then gently fold in the remaining cream in two additions until fully incorporated and airy.
If the chocolate mousse seems too loose, chill briefly (10–15 minutes) until pipeable but still spreadable.
Assembly and Finishing
Prepare your 20 cm heart-shaped removable mold or a round 20 cm mousse ring: if using a ring, line with acetate or plastic strip. Lightly brush the inside of the mold or the acetate with the reserved 2–3 tbsp whipped cream or a thin layer of melted neutral glaze so the mousse will release cleanly. Spray the silicone mold with a light coating of running spray oil or wipe with a little butter.
Place the cake base (if using) at the bottom of the mold so it will be the cake bottom. If you prefer no cake, continue without a base but be sure to freeze the finished mousse to unmold more easily.
Spoon or pipe a layer of chocolate mousse into the mold about 1–1.5 cm thick, smoothing evenly. This creates a bed for the frozen vanilla heart so it sits fully embedded.
Unmold the frozen vanilla heart and pat any excess frost off quickly with a paper towel. Press the frozen heart gently into the center of the chocolate mousse bed so it sits centered and level. Pour or pipe additional chocolate mousse around and over the heart until the mold is filled, leaving a small gap at the top for expansion. Smooth the top with an offset spatula.
Cover the mold with plastic wrap and freeze the assembled cake for at least 4 hours, preferably overnight, until fully firm.
To unmold: remove from freezer and let sit at room temperature 10–15 minutes (longer if the cake is very frozen) so the edges release. Gently invert the mold and remove. If you used acetate, peel it away carefully. If needed, warm a spatula under hot water, dry it, and run it quickly around the exterior to help release clean edges.
Brush or pour the neutral glaze or melted chocolate around the edges to seal any gaps and smooth the finish. Dust the top lightly with cocoa powder and decorate with chocolate shavings as desired. If you want a glossy top, use a mirror glaze suitable for frozen mousse cakes (follow the glaze recipe separately).
Thaw in the refrigerator for 3–4 hours before serving (or 1 hour if partially thawed). Serve chilled-slightly firm so the heart center remains defined when sliced.
