Method
Mocha Sponge Cake
In a small bowl, combine the 2 tsp instant espresso powder with 1 tablespoon hot water and stir until dissolved. Let cool slightly.
In the bowl of a stand mixer or a large bowl with a whisk attachment, beat the 5 large eggs and 1 cup granulated sugar on high speed for 6–8 minutes, until the mixture triples in volume, becomes pale and ribbon-like when the whisk is lifted.
Sift together 1 cup cake flour, 2 tbs cocoa powder, and 1 tsp salt into a medium bowl. Gently fold one-third of the dry ingredients into the beaten eggs using a rubber spatula, folding carefully to retain air. Repeat with the remaining dry ingredients in two additions.
Fold in the dissolved espresso and 1 tsp vanilla extract until evenly distributed, taking care not to deflate the batter.
Fold in the 3 tbs cooled melted butter in a thin stream, mixing gently and quickly to combine.
Divide batter between the prepared pans (or pour into a single pan). Smooth the top, then bake for 18–25 minutes (for 8-inch rounds) or 25–30 minutes (for 9x13) until a toothpick inserted in the center comes out clean and the cake springs back lightly to the touch.
Allow cakes to cool in pans for 10 minutes, then run a knife around the edges and transfer to a wire rack to cool completely before assembling. If using one pan, cool thoroughly and slice into layers horizontally.
Simple Syrup (optional)
Combine 1/2 cup water and 1/4 cup granulated sugar in a small saucepan. Warm over medium heat, stirring until sugar dissolves. Remove from heat and stir in 1/2 tsp instant espresso powder until dissolved. Let cool. Brush lightly on each cake layer to keep them moist.
Mocha Cream (filling)
Dissolve 1 tbs instant espresso powder in 1 tbs hot water and let cool.
In a chilled mixing bowl, whip 1 cup heavy cream to soft peaks. Set aside.
In a separate bowl, beat 8 oz softened mascarpone (or cream cheese) with 1 cup powdered sugar and 1/2 tsp vanilla until smooth and slightly airy. Beat in the cooled dissolved espresso until evenly combined.
Fold the whipped cream into the mascarpone mixture in two additions until homogenous and light. Taste and adjust sweetness if needed. Refrigerate until ready to assemble.
Mocha Buttercream (top & crumb coat)
Dissolve 1 tbs instant espresso powder in 1 tbs hot water and let cool.
In a stand mixer fitted with the paddle attachment (or using a hand mixer), beat 1 cup softened unsalted butter on medium-high speed for 2–3 minutes until pale and fluffy.
Add the cooled dissolved espresso, 1 tsp vanilla extract, 2 tbs heavy cream (or milk), and 1/4 tsp salt. Beat on medium-high for 2–3 minutes until light, spreadable, and silky. If too stiff, add more cream 1 tsp at a time; if too thin, add a little more powdered sugar.
Assembly
If the cake layers are domed on top, level them with a serrated knife so they stack flat.
Place the first cake layer on your serving plate or turntable. If using, brush lightly with the cooled simple syrup to moisten.
Pipe or spread an even layer (about 1/3–1/2 cup) of the mocha cream over the first layer, leaving a small margin at the edge to prevent overflow. Repeat with the second layer (or stack the next cake layer), brushing with syrup if desired and adding another layer of mocha cream. If you have three layers, distribute filling evenly between layers.
Apply a thin crumb coat of mocha buttercream over the entire cake to trap crumbs. Chill the cake in the refrigerator 15–20 minutes to set the crumb coat.
Finish by applying a final, even layer of mocha buttercream over the top and sides. Use an offset spatula or bench scraper to smooth. Decorate as desired—pipe rosettes, dust with cocoa, or sprinkle finely chopped chocolate.
Refrigerate the cake for at least 30 minutes to set the buttercream before slicing. Bring to room temperature 20–30 minutes before serving for best texture and flavor.
