Dark Chocolate Crisp Base
Place chopped dark chocolate and butter in a heatproof bowl set over a simmering water bath (double boiler). Stir until fully melted and smooth. Remove from heat.
Stir in granulated sugar until dissolved, then fold in crushed chocolate wafers or crisped rice cereal until evenly coated and crisp remains intact.
Press the mixture evenly into the base of the prepared pan to a uniform thickness (about 6–8 mm). Chill in the refrigerator for 20–30 minutes until firm.
Silky Chocolate Mousse
Bloom the gelatin: sprinkle gelatin over the 20 ml cold water in a small bowl and let sit 5–7 minutes until spongy.
Warm the 120 ml cream with 60 ml milk in a small saucepan until it just begins to simmer (do not boil). Remove from heat.
Place 180 g chopped dark chocolate in a medium heatproof bowl. Pour about two-thirds of the hot cream mixture over the chocolate and let sit 1 minute to melt; then stir gently until smooth and glossy. Pour the remaining hot cream over the egg yolks in a separate bowl, whisking constantly to temper, then combine the tempered yolk-cream into the chocolate mixture while stirring smooth.
Add the bloomed gelatin to the warm chocolate mixture and stir until fully dissolved. Add a pinch of fine salt and stir to combine. Allow the mixture to cool to about 30–35°C (lukewarm).
Whip the 240 ml cold heavy cream to soft peaks. Fold one-third of the whipped cream into the chocolate base to loosen it, then gently fold in the remaining whipped cream in two additions until homogeneous and airy. Keep the mousse chilled but pipeable.
Spoon or pipe the mousse atop the chilled crisp base to a thickness of about 2–3 cm. Smooth the tops with an offset spatula. Chill in the refrigerator for 1–2 hours (or in the freezer 20–30 minutes) until the mousse is set but not rock-hard.
White Chocolate Ganache Topping & Decoration
Place white chocolate in a heatproof bowl. Heat 80 ml heavy cream until it just reaches a simmer, then pour it over the white chocolate. Let sit 1 minute, then stir until smooth. If using, whisk in the 10 g butter for extra shine and the 5 ml neutral oil if needed to thin and level the glaze.
Let the ganache cool to about 30°C so it is pourable but not hot. Pour the white ganache gently over the chilled mousse layer to create a smooth, even top. Tap the pan lightly to release air bubbles and ensure an even surface. Return to refrigerator for 20–30 minutes to set.
For the tuxedo detail: transfer the 25 g melted dark chocolate to a small piping bag or a zip-top bag with a small corner snipped. Pipe a triangular 'lapel' and small buttons down the center front of each piece. Use a small offset or toothpick to refine shapes quickly before the dark chocolate sets.
Dust a thin light sweep of cocoa powder over one side of each slice to suggest a tuxedo jacket shadow. Optionally add a small edible gold leaf or micro-sprinkle at the lapel corner for a sophisticated accent.
Assembly & Serving
If you used an 8x8 pan, run a warm knife around the edge to release. Invert or lift from mold and cut into 6 equal rectangular pieces using a hot, dry knife (heat knife under hot water, wipe dry between cuts) for clean edges.
Place each piece on a serving plate. Finish with any remaining melted dark chocolate piping for sharper tuxedo lines or a light cocoa dusting as desired.
Serve chilled. These keep in the refrigerator up to 3 days in an airtight container; for travel, refrigerate until just before serving to preserve the shine of the ganache.
