Strawberry Puree

Finishing & Serving
Method
Strawberry Puree
Prepare berries
Rinse the strawberries, hull them (remove green tops) and cut into quarters so they break down easily.
Transfer the puree to a fine-mesh sieve set over a bowl and press with a spatula to remove seeds for a smoother final texture. Discard seeds. You should have about 1 to 1 1/4 cups of puree. Chill while preparing the base.
Soft Base (Creamy Component)
In a medium bowl, whisk together 1 cup whole milk, 1 cup heavy cream, 1 tablespoon sweetened condensed milk, and 1 teaspoon vanilla extract until homogeneous. This creates the creamy 'soft' body.
Stabilizer & Texture
If using gelatin for a more scoopable—but still soft—texture, sprinkle 1 teaspoon gelatin over 1 tablespoon cold water in a small bowl and let bloom for 5 minutes.
Heat the bloomed gelatin gently (in 10-second bursts in the microwave or over a double boiler) until fully dissolved and warm but not boiling, about 15–20 seconds. Stir into the cream/milk mixture until fully incorporated. If you prefer no gelatin, skip this step—the finished product will be more like a very soft frozen mousse and may be less scoopable.
Combine & Chill
Fold the chilled strawberry puree into the cream base. For a uniform pink soft texture, mix until evenly combined. For a marbled effect, gently swirl the puree in, leaving streaks.
Pour the combined mixture into a shallow metal baking pan or a loaf pan for quicker and more even cooling. Cover with plastic wrap, pressing it directly onto the surface to minimize ice crystals.
Refrigerate for 1 hour to let flavors meld and for the gelatin (if used) to set slightly. Then transfer to the freezer to firm up. For a very soft, scoopable consistency, freeze for 2–3 hours and stir every 30–40 minutes (break up forming ice crystals) to maintain a soft, aerated texture. If gelatin was used, check after 2 hours; without gelatin the texture will be softer and may require less time but will be more prone to melting quickly.
Serving
Serve immediately for a soft, spoonable dessert. If stored in the freezer, allow to sit at room temperature for 5–8 minutes before serving to soften slightly.
