Prepare croissants
If croissants are refrigerated or very fresh and soft, warm them for 5 minutes in a 325°F (160°C) oven to refresh and slightly crisp. Allow to cool 2–3 minutes so they’re warm but not hot for filling.
Butter inside
Halve each croissant horizontally or create a pocket by slicing most of the way through. Spread about 1/3 teaspoon of softened butter inside each croissant to add richness and prevent sogginess from the filling.
Assemble
Open croissants, spoon about 2 tablespoons of macerated strawberries (with some syrup) or 2 tablespoons of pastry cream into each croissant, then top with 3–4 sliced strawberries for texture. Close and press gently.
Finish
Dust filled croissants lightly with powdered sugar and garnish with a small mint leaf if desired. Serve immediately for best flakiness.
Strawberry Filling (quick maceration)
Hull and slice 12 strawberries (reserve extra whole strawberries if using for topping). Place slices in a bowl with 2 tablespoons granulated sugar and 1/2 teaspoon lemon juice. Toss to combine and let sit 10–15 minutes until the strawberries release their juices and soften. Stir occasionally and mash a few pieces lightly with the back of a spoon to create a spoonable syrup.
Pastry Cream (optional richer filling)
Mix eggs and starch
Whisk together 2 egg yolks and 3 tablespoons sugar in a heatproof bowl until slightly pale. Add 1 1/2 teaspoons cornstarch and whisk until smooth.
Temper milk
Heat 1 cup whole milk in a small saucepan over medium heat until it just begins to steam and small bubbles form at the edge (don’t boil). Slowly temper the hot milk into the egg mixture in a thin stream while whisking constantly to avoid curdling.
Cook pastry cream
Return the mixture to the saucepan and cook over medium-low heat, whisking constantly, until it thickens and comes to a gentle boil — about 2–3 minutes. Remove from heat, stir in 1 tablespoon butter and 1/2 teaspoon vanilla extract until smooth.
Transfer pastry cream to a bowl, press plastic wrap directly onto the surface to prevent a skin, and chill until cool, at least 30 minutes. Use about 1–2 tablespoons per croissant depending on desired richness.
Finish & Garnish
If you used pastry cream, spoon it into the croissant first, then add macerated strawberries on top so the fruit juices don’t overly thin the cream. Sprinkle 1/4 teaspoon powdered sugar over each finished croissant and add a mint leaf if desired.
Serve within 1–2 hours of assembly for best flakiness. If you need to store, wrap loosely and refrigerate up to 24 hours; bring to room temperature before serving and expect some loss of crispness.
