Mix dry ingredients

In the bowl of a stand mixer fitted with the dough hook (or a large mixing bowl), combine 3.5 cups all-purpose flour, 2.5 tsp instant yeast, 1 tbsp granulated sugar, and 1 tsp salt. Whisk briefly to distribute ingredients evenly.

Add wet ingredients

Add 1 cup warmed whole milk (105–110°F / 40–43°C), 1 large egg, and 3 tbsp softened unsalted butter to the dry mixture. Start mixing on low speed until the ingredients come together into a shaggy dough (about 2 minutes).

Knead

Increase mixer speed to medium and knead with the hook for 6–8 minutes until the dough is smooth, elastic, and slightly tacky. If kneading by hand, turn dough onto a lightly floured surface and knead 10–12 minutes. If dough is excessively sticky, add up to 2 additional tablespoons of flour, 1 tbsp at a time; if too dry, add 1–2 tsp warm milk.

First rise

Lightly oil a clean bowl with about 1 tsp vegetable oil. Shape the dough into a ball, place it seam-side up in the bowl, and turn to coat with oil. Cover with plastic wrap or a damp towel and let rise in a warm draft-free spot until doubled in size, about 60–75 minutes depending on room temperature.

Shape rolls

Gently deflate the risen dough and transfer to a lightly floured surface. Divide the dough into 12 equal pieces (about 70–80 g each). Shape each piece into a tight ball by folding edges under and rolling against the work surface. Place balls on a parchment-lined baking sheet or in two 9x13 pans, leaving 1–1.5 inches between each for expansion.

Second rise

Cover the shaped rolls loosely with plastic wrap or a tea towel and let rise until puffy and nearly doubled, about 35–45 minutes.

Prepare topping

While the rolls are on their second rise, make the soboro topping: in a medium bowl, combine 4 tbsp room-temperature unsalted butter and 3/4 cup granulated sugar. Use a hand mixer or a fork to cream until mixture is grainy but incorporated. Add 1 cup all-purpose flour, 1/4 tsp salt, 1 tsp neutral oil (optional) and 1/2 tsp vanilla extract (optional). Work the mixture with your fingertips, a fork, or a pastry cutter until it forms coarse crumbs—pieces the size of small pebbles. The texture should be crumbly, not paste-like. If mixture is too dry and won't clump at all, add another 1/4 tsp oil; if too wet, add up to 1 tbsp extra flour.

Chill (optional)

For firmer crumbs that hold shape while baking, refrigerate the topping for 10–15 minutes before using. This step is optional but helpful in warm kitchens.

Top rolls

When rolls have completed their second rise and are puffy, gently brush the tops with the egg wash (1 large egg beaten with 1 tsp milk). Using clean fingers or a spoon, press and press handfuls of the soboro crumb mixture onto each roll top so it adheres and forms an even crumb layer. You want each roll to be generously covered but not completely sealed (leave a little edge visible).

Baking & Finish

Preheat oven

Preheat the oven to 350°F (175°C) about 10 minutes before baking so it's fully up to temperature when the rolls go in.

Bake

Place the tray(s) with topped rolls on the middle rack. Bake at 350°F (175°C) for 18–22 minutes, rotating the pan once if necessary, until the crumb topping is golden brown and the rolls are cooked through (internal temperature ~190°F / 88°C). If the topping browns too quickly, loosely tent with foil for the last 5–7 minutes.

Cool

Remove from oven and transfer rolls on the parchment to a wire rack. Let cool at least 15–20 minutes before serving so the topping sets and the interior finishes steaming. Serve warm or at room temperature.

Storage

Store cooled soboro bread in an airtight container at room temperature for up to 2 days (topping will soften). For longer storage, freeze individual rolls tightly wrapped for up to 1 month; thaw at room temperature and refresh in a 300°F oven for 5–7 minutes.
