Strawberry Base
Make the strawberry syrup
Place the quartered strawberries, granulated sugar, lemon juice and 2 tablespoons warm water in a small saucepan. Mash gently with a spoon to release juices. Heat over medium-low for 4–6 minutes until strawberries soften and sugar dissolves, stirring occasionally.
Remove from heat and let cool slightly, then transfer the mixture to a blender or use an immersion blender and puree until smooth. Taste and adjust sweetness with an extra 1/2 tablespoon sugar if needed.
Strain the puree through a fine mesh sieve into a small bowl, pressing on solids to extract as much liquid and flavor as possible. This yields about 3 tablespoons of bright pink strawberry syrup. Refrigerate if not using immediately.
Creamy Strawberry Milk
In a tall mixing glass or pitcher, combine the chilled whole milk, chilled heavy cream, 3 tablespoons of the strawberry syrup, vanilla extract and honey or simple syrup if you want it sweeter. Stir gently until everything is well combined and slightly pink in color.
Taste and adjust: add up to 1 tablespoon more strawberry syrup for stronger flavor or an additional 1/2 teaspoon vanilla for extra warmth. Keep chilled.
Assembly & Garnish
Fill a serving glass about 3/4 full with crushed ice.
Pour the creamy strawberry milk over the ice, leaving room at the top for whipped cream if using.
Spoon whipped cream on top (optional) and drizzle a little extra strawberry syrup over the whipped cream for a swirl of pink.
Serve immediately. Stir before drinking to blend the syrup settled at the bottom for an even strawberry flavor.
