Heat milk and cream

In a medium saucepan, combine 2 cups whole milk, 1 cup heavy cream and 2 tablespoons orange zest. Warm over medium heat until bubbles form around the edge and steam rises, about 5–7 minutes. Do not boil. Remove from heat and let sit 5 minutes to infuse.

Bloom cornstarch with yolks

In a medium bowl, whisk 4 large egg yolks with 1 tablespoon cornstarch and 1 cup granulated sugar until smooth and slightly paler, about 1–2 minutes.

Temper eggs

Slowly ladle 1/3 of the hot milk mixture into the egg yolk mixture while whisking constantly to temper. Then pour the tempered yolks back into the saucepan with the remaining milk mixture, whisking to combine.

Thicken custard

Place the saucepan back over medium-low heat and cook, stirring constantly with a wooden spoon or heatproof spatula, until the mixture thickens and coats the back of the spoon, about 5–8 minutes. Do not let it boil vigorously. Once thickened, remove from heat and stir in 1 teaspoon vanilla extract and 1 cup freshly squeezed orange juice. Taste and add 1/4–1/2 teaspoon fine sea salt if needed to balance sweetness (recipe calls for 1 tsp total).

Cool

Pour the custard through a fine-mesh sieve into a clean bowl to remove zest and any cooked bits. Cover surface with plastic wrap to prevent a skin and chill until just cool, about 30–40 minutes. The custard will continue to set as it cools.

Orange Gel (for bright orange layer)

Bloom gelatin

Sprinkle 1.5 teaspoons powdered gelatin over 2 tablespoons cold water in a small bowl. Let sit 5 minutes to bloom.

Heat juice

In a small saucepan, combine 1 cup freshly squeezed orange juice and 2 tablespoons granulated sugar. Warm over low heat just until the sugar dissolves and the juice is hot but not boiling, about 2–3 minutes.

Combine gelatin and juice

Remove the juice from the heat and whisk in the bloomed gelatin until fully dissolved. Let cool to room temperature but still pourable, about 10–15 minutes. If it begins to set too quickly, gently rewarm off heat only until pourable.

Whip cream

Chill a mixing bowl and whisk or beaters in the fridge for 10 minutes if possible. Pour 1 cup heavy whipping cream into the bowl with 2 tablespoons powdered sugar, 1 tablespoon orange zest and 1/2 teaspoon vanilla extract. Whip on medium-high speed until soft-medium peaks form (stiff peaks will be overly firm for this assembly), about 2–3 minutes.

Adjust sweetness

Taste and adjust powdered sugar by up to 1 additional tablespoon if you prefer a sweeter topping. Fold gently to keep it airy.

Assembly & Garnish

Prepare serving dish

Select a shallow rectangular dish or individual serving glasses. Arrange 12 ladyfingers or thin sponge cake slices in a single layer to line the base (trim to fit if needed). Lightly brush or sprinkle a tablespoon of orange juice over the sponge to moisten—do not soak.

Layer custard

Spoon or pipe half of the cooled orange custard over the sponge layer, smoothing to an even thickness (about 1/2 to 3/4 inch).

Add orange gel

When the orange gel is cooled but still pourable, gently pour a thin layer (~1/4 inch) of gel over the custard. Place the assembly in the refrigerator for 15–20 minutes to allow the gel to set lightly.

Finish with remaining custard and whipped cream

Remove the dish from the refrigerator and spread the remaining custard over the set gel, smoothing the top. Dollop or pipe the whipped orange cream evenly across the surface.

Garnish

Top with orange segments (supremes) if using and tuck mint leaves between segments. Optionally sprinkle a little extra orange zest over the top for brightness.

Chill and serve

Chill the assembled dessert at least 2 hours (preferably 3–4) to fully set and meld flavors. Serve chilled. Leftovers keep covered in the refrigerator for up to 3 days.
