Method
Mocha Coffee Base
Brew a single strong espresso shot (about 30–45 ml). If you don't have an espresso machine, brew 60 ml of very strong coffee (use a concentrated pour-over, Moka pot, or French press with double the grounds).
In a small heatproof cup or bowl, whisk together the hot espresso/coffee, 1 tablespoon unsweetened cocoa powder, and 1 teaspoon granulated sugar until the cocoa and sugar are fully dissolved and the mixture is smooth. Keep warm.
If the coffee base is too concentrated or you prefer a slightly longer drink, add up to 60 ml hot water to reach desired volume and temperature.
Whipped Cloud Topping

Place a mixing bowl and whisk/beaters in the refrigerator or a bowl of ice for 5–10 minutes. Cold tools help the cream whip faster and hold structure.
In the chilled bowl, add 120 ml heavy cream, 30 g softened cream cheese, 1 tablespoon powdered sugar, 1 teaspoon vanilla extract, and 1 teaspoon instant espresso powder (if using).
Using an electric mixer or hand whisk, beat the mixture on medium-high speed until soft peaks form and the texture is light, billowy, and spreadable — about 2–4 minutes. Do not overbeat to stiff butter-like texture; you want a cloud that will sit atop the coffee.
Taste the cloud topping and adjust sweetness or coffee flavor by adding a little more powdered sugar or a pinch more instant espresso powder. Fold gently to incorporate any additions.
Mocha Drizzle & Assembly
Make the mocha drizzle: place the 30 g chopped semisweet chocolate and 5 g unsalted butter in a small microwave-safe bowl. Microwave in 10–15 second bursts, stirring between bursts, until melted and glossy. Alternatively, melt over a double boiler. Let the mixture cool slightly so it thickens but remains pourable.
Pour the warm mocha coffee base into a serving glass or mug, leaving a generous 2–3 cm of space at the top for the cloud topping.
Spoon or dollop the whipped cloud topping gently onto the coffee surface. Aim for a thick, lofty dome that sits on top of the drink rather than sinking in (the cream cheese helps it hold).
Drizzle the warm chocolate over the top of the cloud in a thin stream to create mocha ribbons. If desired, dust the top lightly with 1 teaspoon cocoa powder using a small sieve.
Finish with optional chocolate shavings or cocoa nibs for texture. Serve immediately so the cloud remains airy; instruct guests to stir the cloud into the coffee themselves or sip through it.
