Mix dry ingredients

In a large bowl or the bowl of a stand mixer fitted with the dough hook, whisk together the all-purpose flour, instant dry yeast, granulated sugar, and sea salt until evenly combined.

Combine wet ingredients

In a small bowl or measuring cup, whisk the warmed milk, room-temperature egg, and vegetable oil until blended. Add the softened butter cut into pieces to the flour mixture.

Form dough

With the mixer on low (or using a wooden spoon if mixing by hand), gradually pour the milk/egg mixture into the dry ingredients. Mix until a shaggy dough forms, then increase speed to medium-low and knead about 6–8 minutes until the dough is smooth, slightly tacky, and elastic. If kneading by hand, turn the dough onto a lightly floured surface and knead 8–10 minutes.

First rise

Form the dough into a ball, place it into a lightly oiled bowl, turning once to coat. Cover tightly with plastic wrap or a damp towel and let rise in a warm draft-free place until doubled in size, about 60–75 minutes depending on room temperature.

Shape mini loaves

After the dough has doubled, gently deflate it and turn it onto a lightly floured surface. Divide the dough into 12 equal pieces (about 60–70 g / 2–2.5 oz each). Roll each piece into a smooth ball, then shape each into a small oval or mini loaf by rolling under your palm to create surface tension.

Second rise

Arrange the shaped mini loaves on a parchment-lined baking sheet or in two standard 9x5-inch mini loaf pans (6 each), leaving 1 inch between them. Cover loosely with lightly greased plastic wrap or a damp towel and let rise until puffy and nearly doubled, about 35–45 minutes.

Make the buttercream

While the dough is undergoing the second rise, make the buttercream. In a medium bowl, beat the softened butter with an electric mixer on medium speed until smooth and paler, 1–2 minutes. Gradually add the confectioners' sugar, about 1/2 cup at a time, mixing on low until incorporated, then increase speed to medium. Add the vanilla extract, heavy cream (or milk), and salt. Beat until light, fluffy and spreadable, 2–3 minutes. If the buttercream is too stiff add 1 tsp more cream; if too thin, add a bit more powdered sugar. If desired, tint a small portion with yellow or another food coloring.

Fill piping bag

Spoon the buttercream into a piping bag fitted with a small round or star tip for a decorative fill, or use a zip-top bag and cut one corner for a simpler method. Reserve about 1/4 cup of buttercream for topping decoration if you want piped swirls on top.

Optional — chill briefly

If your buttercream became too soft while prep continues, chill it 10 minutes to firm slightly so it holds shape when piped.

Egg Wash & Baking

Preheat and egg wash

Preheat the oven to 350°F (175°C) in the last 10 minutes of the second rise. Whisk together the egg and 1 teaspoon water to make an egg wash. Gently brush the tops of the risen mini loaves with egg wash, taking care not to deflate them. If desired, sprinkle a little coarse sugar on top for sparkle.

Bake

Bake the mini loaves on the middle rack for 14–18 minutes, until the tops are golden brown and an instant-read thermometer inserted in the center registers about 190–195°F (88–90°C). Rotate the pan halfway through baking for even coloring if your oven has hot spots.

Cool

Remove the breads from the oven and transfer to a wire rack. If baked in loaf pans, let cool 5 minutes in the pans, then invert to release and cool completely on the rack. Cooling completely (about 1 hour) is important so the buttercream doesn't melt when applied.

Assembly & Serving

Fill or top the mini breads

Once the mini breads are completely cool, use the piping bag to pipe a line or spiral of buttercream down the center of each loaf. For a filled variation, use a small paring knife or a piping tip to cut a shallow slit along the top and pipe buttercream into the cut, about 1–2 tablespoons per roll.

Decorate and finish

If you reserved buttercream for topping, pipe small rosettes or dots on top. Optionally dust lightly with sifted powdered sugar or sprinkle a few coarse sugar crystals. Let the filled breads rest 10–15 minutes for the buttercream to set slightly before serving.

Storage

Store assembled mini buttercream breads in an airtight container in the refrigerator for up to 3 days. Bring to room temperature before serving (about 20–30 minutes). Unfilled breads (no buttercream) can be stored at room temperature in an airtight container for up to 2 days or frozen up to 1 month; thaw and refresh in a 300°F (150°C) oven 5–7 minutes.
