Milk Base
Warm the milk mixture
In a medium saucepan set over medium-low heat, combine 4 cups whole milk, 1/2 cup heavy cream, 3 tablespoons granulated sugar, and 1 teaspoon sea salt. Stir gently until sugar dissolves. Warm the mixture until it just begins to steam and tiny bubbles appear at the edge (do not boil), about 6–8 minutes.
Infuse vanilla
Remove saucepan from heat. Stir in 1 teaspoon vanilla bean paste or extract. If using a scraped vanilla bean, add the seeds and pod while warming and remove the pod now.
Tenderizing/Softening Additions
Bloom gelatin
While the milk warms, sprinkle 1 tablespoon powdered gelatin evenly over 2 tablespoons cold water in a small bowl. Let sit 3–5 minutes to bloom (it will swell and thicken).
Add gelatin
Microwave the bloomed gelatin for 8–10 seconds or gently warm it until liquefied (do not boil). Whisk the dissolved gelatin into the warm milk mixture until completely combined.
Set & Chill
Cool slightly
Let the milk mixture cool at room temperature for 10–15 minutes, stirring occasionally to prevent a film from forming on top.
Strain
For an ultra-smooth result, strain the mixture through a fine-mesh sieve into a clean bowl or large measuring cup to remove any undissolved bits or foam.
Portion and chill
Pour the strained milk mixture into individual serving bowls or ramekins (about 6–8, depending on portion size). Cover each loosely with plastic wrap, pressing the plastic directly onto the surface to prevent a skin from forming. Refrigerate until fully set and very soft — at least 3 hours, preferably 4–6 hours. The texture should be gently set and 'milk-soft' rather than firm.
Finish & Serve
Unmold or serve directly
If you used ramekins, run a thin knife around the edge and gently invert onto serving plates. Otherwise serve directly from bowls.
Garnish
Drizzle each serving with a little honey or maple syrup (about 1/2 teaspoon per portion) and scatter toasted sliced almonds and fresh berries on top as desired. Serve chilled.
