Prepare fruit
If using fresh mango, peel, pit and roughly chop until you have about 1 cup packed. If using frozen mango, measure 1 cup and let sit 2–3 minutes at room temperature so pieces separate slightly.
Sweeten and flavor
Add the honey or maple syrup, fresh lime juice, vanilla extract (if using), and a pinch of salt to the blender. The salt brightens the mango flavor.
Add ice
Add about 1 cup of ice cubes. If you prefer a thicker smoothie use slightly more ice or use frozen mango and reduce ice to 1/2 cup.
Blend
Secure the blender lid and blend on medium-high for 45–60 seconds, or until completely smooth and no large pieces of ice or mango remain. If the mixture is too thick to blend, add 1–2 tablespoons of milk at a time until it moves smoothly; if too thin, add a few more ice cubes or 1/4 cup frozen mango and blend again.
Taste and adjust
Taste the smoothie and adjust sweetness or acidity: add up to 1 additional teaspoon honey/maple syrup if needed or another 1/2 teaspoon lime juice for brightness. Blend briefly (5–10 seconds) after adjustments.
Portion
Pour the finished smoothie into a 16 oz glass or a to-go cup. This recipe yields approximately 16 ounces (one serving).
Garnish
Garnish with a mango slice on the rim and 1–2 mint leaves on top, if desired. Serve immediately with a straw.
