Make simple matcha syrup

In a small saucepan combine 0.5 cups granulated sugar and 120 ml water. Heat over medium until the sugar dissolves and the mixture comes to a gentle simmer, stirring occasionally (about 3–4 minutes). Remove from heat and let cool for 5 minutes.

Whisk matcha into syrup

Place 2 tablespoons matcha powder in a small bowl or jar. Slowly whisk 2–3 tablespoons of the warm syrup into the matcha to make a smooth paste without lumps, then whisk in the remaining syrup until fully combined. Chill the matcha syrup in the refrigerator for at least 10 minutes before assembling (can be made ahead and refrigerated up to 1 week).

Mascarpone cream

Whip cream and combine

In a chilled bowl whip 0.25 cups heavy cream until soft peaks form (about 1–2 minutes with an electric mixer). Add 3 oz mascarpone cheese, 1 tablespoon powdered sugar and 0.5 teaspoon vanilla extract. Continue to beat just until the mixture is smooth and holds soft peaks; do not overwhip or the mascarpone may break. Taste and adjust sweetness if desired.

Coffee layer

Prepare coffee

Brew strong espresso or dark roast coffee and chill. Measure 0.25 cups (about 2 oz) of chilled coffee. If desired, stir in 0.5 teaspoon coffee liqueur for an adult variation.

Assembly & drink

Assemble in glass

Take a 16 oz (about 475 ml) serving glass. Add 1–2 tablespoons of the chilled matcha syrup to the bottom of the glass (reserve about 1–2 tablespoons for topping). Add the 0.25 cups chilled coffee, then fill the glass with ice cubes (about 1 cup).

Add milk and cream

Pour 8 oz milk over the ice slowly. Spoon or dollop the mascarpone cream on top of the milk (gently push it to float on top so it forms a creamy layer). If you prefer the cream mixed in, stir gently with a long spoon.

Finish and garnish

Drizzle the reserved matcha syrup over the mascarpone cream and dust with 0.5 teaspoon cocoa powder and 0.25 teaspoon matcha powder for a tiramisu-inspired finish. Taste and add optional liquid sweetener to taste if the drink needs additional sweetness.

Serve

Serve immediately with a straw and a long spoon so the drinker can stir layers as desired. The iced matcha tiramisu latte yields one 16 oz serving.
