Steep lavender

In a small heatproof bowl or cup, combine the dried culinary lavender buds and 120 ml hot water (about 80°C / 175°F). Cover and steep for 5 minutes to extract floral flavor without bitterness.

Strain lavender infusion

After 5 minutes, strain the lavender infusion through a fine-mesh sieve or tea strainer into a separate cup, pressing gently on the buds to extract liquid. Discard or reserve the spent buds for another use.

Dissolve sugar

Add the 2 tablespoons granulated sugar (or chosen sweetener) to the warm lavender infusion and stir until fully dissolved. If using honey, stir until incorporated while the liquid is warm.

Prepare matcha

Place 2 teaspoons matcha powder into a small bowl. Add about 1–2 tablespoons (15–30 ml) of the warm lavender-sweetened infusion and whisk briskly in an M or zig-zag motion with a bamboo whisk (chasen) or small whisk until a smooth, lump-free paste forms and a light froth appears.

Combine concentrate

Gradually whisk in the remaining lavender infusion until the matcha is fully incorporated and smooth. Taste and adjust sweetness if needed. Allow the concentrate to cool to room temperature (5–10 minutes) or chill briefly in the refrigerator.

Lemonade & Assembly

Mix lemonade

In a 16 oz (about 475 ml) serving glass or shaker, combine 60 ml fresh lemon juice, 200 ml cold water, and 15 ml simple syrup (or adjust to taste). Stir or shake to combine.

Add ice and matcha concentrate

Fill the serving glass with ice cubes to about three-quarters full. Pour the cooled matcha-lavender concentrate (about 120 ml total) over the ice, then add the lemonade mixture. Stir gently to combine. The drink will show a subtle green hue from the matcha; if you prefer a stronger matcha flavor, add an extra 1/2–1 tsp matcha dissolved in a splash of the lavender infusion or water.

Adjust sweetness and flavor

Taste and adjust: add a splash more simple syrup if you want sweeter, more lemon juice if you want brighter acidity, or a tiny pinch more matcha if you want more vegetal notes. If the lavender aroma is faint, garnish with a sprig of fresh lavender for aroma.

Garnish and serve

Garnish with a lemon wheel or wedge and a fresh lavender sprig or a pinch of dried lavender buds on top. Serve immediately with a straw.
