Bring water to a simmer

In a small pot or kettle, bring 4 cups of water to just under a rolling boil (about 200°F / 93°C).

Steep the tea

Place 2 tablespoons loose black tea (or 2 standard tea bags) into a heatproof pitcher or teapot. Pour the hot water over the tea and steep for 4–5 minutes for a full-bodied brew. For milder flavor, steep 3 minutes.

Strain out the loose leaves (or remove tea bags) and discard. Allow the brewed tea to cool at room temperature for 10–15 minutes, then place in the refrigerator to chill another 20–30 minutes until cold. (If pressed for time, use ice to cool faster but account for dilution.)

Honey syrup

While the tea cools, make a honey syrup so the honey mixes easily into cold tea: combine 4 tablespoons honey with 2 tablespoons hot water in a small bowl or jar. Stir until fully combined and slightly runny. If your honey is very thick, warm briefly in the microwave (5–10 seconds) or stir until dissolved.

Lemon and finishing

Measure 2 tablespoons fresh lemon juice (about one large lemon). If you like brighter lemon flavor, add up to 1 tablespoon more to taste. Optional: reserve one lemon slice for garnish and a little zest (½ tsp) to boost aroma.

Assemble the iced tea: fill a 16-oz glass with 1 cup of ice. Pour in 8 ounces (1 cup) of the chilled brewed tea, then add the honey syrup and lemon juice. Stir thoroughly to combine. Taste and adjust: add more honey syrup for sweetness or more lemon juice for brightness. If the tea was concentrated (steeped with less water), top with additional chilled tea or a splash of cold water to reach 16 oz.

Garnish with 2 lemon slices and 4 mint leaves and a light sprinkle of lemon zest if using. Serve immediately with a straw and a stirrer.
