Lavender Honey Syrup
Make syrup
Combine 1 cup water and 1 tablespoon dried culinary lavender in a small saucepan. Bring to a gentle simmer over medium heat and simmer for 3 minutes, then remove from heat. Let steep for 10 minutes off the heat to extract lavender flavor.
Strain the lavender from the liquid into a heatproof container using a fine mesh sieve or cheesecloth, pressing gently on solids to extract flavor. Discard solids.
While syrup is still warm, whisk in 3 tablespoons honey until fully dissolved. Stir in 1 teaspoon vanilla extract if using. Taste and adjust honey (add up to 1 tablespoon more for sweeter syrup). Cool to room temperature, then refrigerate until chilled. Syrup yields about 3/4 cup and keeps refrigerated for up to 2 weeks.
Coffee
Brew 2 shots of espresso (about 60 ml total). If you don't have an espresso machine, make 60 ml very strong brewed coffee (use a concentrated Moka, Aeropress, or reduced drip). Let the espresso settle briefly so heat does not overly melt the ice when assembling.
If you prefer slightly cooler coffee before pouring over ice, let espresso sit 1–2 minutes or pour over a few ice cubes to cool and then discard the small amount of melt before assembly.
Milk & Assembly
Prepare glass
Fill a 16 oz serving glass with 1 cup of ice cubes, leaving room for milk and espresso.
Pour 3 tablespoons (about 45 ml) of the chilled lavender honey syrup over the ice. Swirl gently to coat ice and begin sweetening the base.
Garnish with a small lavender sprig or a light pinch of dried lavender blossoms on the foam. Serve with a straw or stirrer so the drinker can mix to taste.
