Steep chamomile
Bring 240 ml (about 1 cup) of water to just under boiling (about 93°C / 200°F). Place 2 tablespoons dried chamomile flowers (or 2 chamomile tea bags) into a heatproof vessel, pour the hot water over them, and steep for 5–7 minutes for a full floral extraction. If you prefer a lighter flavor, steep 3–4 minutes.
After steeping, strain the flowers (or remove tea bags) and discard. Measure and reserve 240 ml of the brewed chamomile. While still warm, stir in the sweetener: 2 tsp honey or 2 tsp simple syrup, and 1 tsp vanilla extract if using. Stir until dissolved.
Allow the sweetened chamomile to cool slightly (5–10 minutes), then transfer to the refrigerator or an ice bath to chill quickly until cold (10–15 minutes). If you want to avoid diluting with ice, chill fully in the fridge for 30–45 minutes.
Once chilled, add 120 ml cold water to the brewed chamomile to bring the volume and strength appropriate for a 16 oz beverage (this lightens the concentrate to a balanced flavor for an iced latte).

Prepare milk
Measure 200 ml milk of choice. If you prefer a foamy top, froth about 50–75 ml of the milk using a handheld frother or steam wand until silky foam forms. For a creamier latte, use whole milk or barista oat milk; for lower calories, use almond or skim.
Taste and adjust sweetness: add additional honey or simple syrup in 1/2 tsp increments if needed. Stir gently to combine if you adjust.
Finish & garnish
If using, lightly grate 1 tsp lemon zest over the top to brighten the drink. Garnish with a dried chamomile flower or a thin lemon wheel on the rim.
Serve immediately with a straw or spoon. Stir before drinking if separation occurs.
