Coffee base

1

Combine coffee and water

In a large jar or pitcher, add 0.5 cup coarsely ground coffee. Pour 4 cups cold, filtered water over the grounds, ensuring all grounds are saturated. Stir gently to combine.

2

Steep

Cover the jar or pitcher and let steep at room temperature or in the refrigerator for 12 to 18 hours. (Shorter time = lighter body; longer time = stronger concentrate.)

3

Strain

After steeping, strain the coffee through a fine-mesh sieve lined with a coffee filter, cheesecloth, or a clean tea towel into a clean pitcher to remove grounds. If using a sieve alone, strain slowly to reduce sediment. You should end up with about 3 to 3.5 cups of cold-brewed coffee concentrate.

4

Optional dilute

If the concentrate is stronger than desired, dilute with cold water in a 1:1 ratio (equal parts concentrate to water) until it reaches the desired strength. For a 16 oz serving target, plan for roughly 6–8 oz concentrate plus cold water to fill 16 oz with ice.

To serve

5

Fill a 16 oz glass with 1 cup (about 8 oz) ice cubes.

6

Pour 6 to 8 oz of the brewed and diluted coffee over the ice, leaving room for milk or sweetener if desired.

7

Add 1 tablespoon simple syrup (adjust to taste). If using granulated sugar, dissolve it first in a tablespoon of warm water to make a quick syrup. Stir gently to combine.

8

If desired, add 2 tablespoons milk, cream, or non-dairy milk and stir. Taste and adjust sweetness or milk. Serve immediately.
