Method
Lavender Hot Honey Syrup
Make syrup
Combine 1 cup water and 1 tsp dried lavender in a small saucepan. Bring to a gentle simmer over medium heat, then reduce heat and simmer for 4 minutes to extract lavender aroma.
Remove from heat and steep for 8 minutes, covered, to intensify flavor. Strain the lavender through a fine mesh sieve into a heatproof container, pressing gently to extract liquid. Discard solids.
Return the infused water to the saucepan. Add 2 tbsp honey and 1 tsp vanilla extract. Add a pinch of red pepper flakes if using. Heat gently and stir until honey fully dissolves (do not boil). Remove from heat and cool slightly. Store any extra in the refrigerator for up to 2 weeks.
Espresso / Coffee
Brew 2 shots of espresso (about 60 ml total) using an espresso machine. If you don't have an espresso machine, brew 60 ml of very strong coffee (a concentrated pour-over, Moka pot, or Aeropress works). Keep the shots hot.
Stir 1 to 1½ tbsp of the warm lavender hot honey syrup into the hot espresso to taste. Set aside.
Milk / Foam
Pour 8 oz milk and 1 tbsp heavy cream (if using) into a milk pitcher. Steam with a steam wand to about 140–150°F (60–65°C), creating creamy microfoam. If you do not have a steamer, heat the milk on the stovetop until warm (not boiling) and froth vigorously using a handheld milk frother or by shaking in a tightly sealed jar and then whisking to create foam.
Gently tap the pitcher on the counter and swirl to smooth the foam and integrate milk and microfoam.
Assembly & Garnish
Pour the sweetened espresso into a preheated 12 oz cup.
Slowly pour steamed milk into the cup, holding back foam with a spoon, until the cup is about 3/4 full. Spoon the remaining foam on top to create a soft dome.
Drizzle 1 tsp of the reserved lavender hot honey over the foam in a spiral or zigzag pattern.
Finish with a very small pinch of dried lavender buds on top for aroma. If you used red pepper flakes in the syrup and want more heat, very lightly dust a few flakes on the foam (optional).
Serve immediately. Stir gently before drinking to combine honey syrup if desired.
