Method
Steep the Chamomile
Heat water
Bring fresh water to just under a boil (about 200°F / 93°C). If you don't have a thermometer, bring to a rolling boil then let sit 30–45 seconds.
Place 2 tsp dried chamomile flowers (or 1 chamomile tea bag) into a 12 oz cup or small French press. Pour 8 oz hot water over the chamomile.
Cover and steep for 4–6 minutes, depending on desired strength. Longer steeping yields a stronger herbal flavor. Strain or remove the tea bag and set the brewed chamomile tea aside.
Prepare the Milk & Sweeten
Measure 4 oz milk into a small saucepan or frothing pitcher. Add 1 tbsp honey (or maple syrup) and 1 tsp vanilla extract if using.
Warm the milk over low–medium heat until it reaches about 150°F (65°C) — small bubbles will appear around the edges but it should not boil. If using a thermometer, stop heating at 150°F; otherwise heat until steaming and hot to the touch (about 2–3 minutes).
Froth the milk: use a handheld frother, milk steamer, or French press. Froth until microfoam forms and volume increases slightly (about 20–40 seconds with a frother, longer with a French press). If you want more foam, use the extra 2 oz milk: steam or heat it and foam separately to top the latte.
Assemble the Latte
Slowly pour the warmed, frothed milk (about 4 oz) into the chamomile tea, holding back the foam with a spoon. Then spoon the foam on top to fill the cup to 12 oz.
Taste and adjust sweetness; add a little more honey or maple syrup if desired and stir gently.
Garnish with a light dusting of ground cinnamon or nutmeg (about 1/8 tsp) if desired. Serve immediately.
