Prepare melon
Trim the ends of the honeydew. Using a sharp knife, cut away the rind and remove the seeds. Cut the flesh into roughly 1-inch cubes (you should get about 6–7 cups).
Place half of the cubes (about 3 cups) into a blender or food processor. Reserve the remaining cubes in a chilled bowl for texture.
Cream & Flavoring
Transfer the puréed melon to a mixing bowl. Stir in the Greek yogurt, heavy cream (or coconut cream) and vanilla extract until completely combined and silky. The mixture should be soft, velvety and pourable.
If you want an extra-smooth texture, briefly pulse the combined mixture in the blender for 5–10 seconds and then scrape into the bowl again.
Texture & Garnish
Fold the reserved honeydew cubes into the purée gently to create contrasts of soft and slightly firmer melon pieces.
Taste and add a final pinch of salt to heighten sweetness. Add the lime zest and gently stir to distribute.
Divide the honeydew soft among 4 chilled dessert bowls or glasses. Garnish each serving with 2 mint leaves, a sprinkle (about 1/2 tsp) of toasted sliced almonds and a very light dusting of cracked black pepper—this enhances aroma and adds subtle contrast.
Optional chilling & serving
For best texture, chill the assembled bowls in the refrigerator for 20–30 minutes before serving so flavors meld and cream firms slightly.
If you prefer a lighter, spritzed finish, just before serving pour about 15 ml cold sparkling water over each portion and serve immediately so it keeps fizz.
Serve with a small spoon. Leftovers keep in an airtight container in the fridge for up to 24 hours; the mixture will thin slightly as the fruit releases juices—stir before serving.
