Prepare spreads

In a small bowl or on a plate, mix the mayonnaise and Dijon mustard until smooth. Set aside.

Butter bread

Spread the softened butter evenly on one side of each slice of bread. The buttered side will be the exterior if toasting; if you prefer untoasted, you can butter only lightly or omit.

Assemble sandwich

Place one slice of bread butter-side down on a cutting board or plate. On the opposite (unbuttered) side, spread the mayo-Dijon mixture evenly. Layer the ham slices across the bread so they cover the surface. Add the cheddar slice on top of the ham. If using, add tomato slices and lettuce. Sprinkle the tomato with the salt and black pepper, if using. Top with the second slice of bread, butter-side up.

Serve or toast

If serving cold, cut the sandwich in half diagonally or down the middle and serve immediately. If you prefer a toasted/grilled sandwich, proceed to the next step.

Toasting (optional)

Heat a nonstick skillet or griddle over medium heat. Add the 1 tsp butter or a little olive oil and swirl to coat the surface.

Place the assembled sandwich in the hot skillet. Cook for 2–3 minutes on the first side, pressing gently with a spatula or weighted press to compact the sandwich and help the cheese melt. Check the underside: it should be golden brown.

Flip the sandwich carefully and cook the second side another 2–3 minutes until golden and the cheese is melted. If the bread browns too quickly before the cheese melts, lower the heat to medium-low and cover the pan with a lid for 1–2 minutes to trap heat and speed melting.

Remove from the pan and let rest 1 minute, then slice and serve.
