Earl Grey Syrup
Brew the infusion
Combine 1 cup water and 1 cup granulated sugar in a small saucepan. Heat over medium until sugar dissolves and the mixture comes just to a simmer.
Remove from heat, add 2 Earl Grey tea bags and 1 tablespoon lemon zest. Steep, covered, for 8–10 minutes for a pronounced bergamot flavor.
Discard tea bags (squeeze gently to extract syrup), strain the syrup through a fine mesh into a jar to remove zest (if desired). Cool to room temperature before using. This yields about 1 cup of syrup; use 3 tablespoons in the recipe and refrigerate the remainder for up to 2 weeks.

Bloom the gelatin
Sprinkle 1 teaspoon powdered gelatin over 1 tablespoon cold water in a small bowl. Let sit 3–5 minutes to bloom.
Warm the bloomed gelatin gently (10–15 seconds) in the microwave or over a double boiler until fully dissolved but not boiling. Set aside to cool slightly.
Prepare cream-cheese base
In a medium bowl, whisk together 2 ounces softened cream cheese, 2 tablespoons powdered sugar, and 1 teaspoon vanilla until smooth and lump-free.
Stir in 3 tablespoons cooled Earl Grey syrup into the cream-cheese mixture until combined.
Make the cloud foam
Combine 1 cup chilled heavy cream and 1 cup chilled whole milk in a chilled mixing bowl. Using a hand mixer or stand mixer fitted with whisk, beat on medium speed until the mixture thickens and soft peaks begin to form (about 2–3 minutes). You want a light, aerated texture, not stiff whipped cream.
Fold the cream-cheese-syrup mixture gently into the whipped cream-milk blend until evenly combined. Then fold in the dissolved gelatin quickly and evenly to set the cloud slightly when chilled.
Transfer the mixture to a piping bag or cover the bowl and refrigerate 20–30 minutes to let the gelatin take hold; the texture should be airy and spoonable but hold gentle peaks.
Assembly & Garnish
Serve
Fill two glasses (serves 2) with ice (about 1/2 cup ice per glass). Spoon or pipe the chilled Earl Grey cloud over the ice, filling each glass about three-quarters full. If you prefer a layered drink, add 1–2 tablespoons extra Earl Grey syrup per glass before topping with the cloud.
Garnish each serving with a lemon slice or twist and a light sprinkle (about 1/2 teaspoon) of dried lavender or bergamot peel if using.
Serve immediately with a spoon or straw to enjoy the creamy, aromatic cloud over chilled ice.
