Warm the milk

In a medium saucepan, combine 2 cups whole milk and 1 tablespoon granulated sugar. Heat over medium until it just begins to steam and small bubbles form at the edge (do not boil). Remove from heat.

Whisk egg yolks and starch

In a bowl, whisk 4 egg yolks with 3 tablespoons cornstarch and a pinch of salt until smooth and slightly pale. If mixture is thick, add 1 tablespoon of the warm milk to temper.

Temper the yolks

Slowly pour about 1/3 of the hot milk into the yolk mixture while whisking constantly to raise temperature without curdling. Then pour the tempered yolk mixture back into the saucepan with the remaining milk, whisking constantly.

Cook to thicken

Return saucepan to medium heat and cook, stirring constantly with a whisk or heatproof spatula, until mixture thickens and comes to a gentle boil (about 2–4 minutes). Once thickened to a pudding-like consistency, remove from heat.

Finish custard

Stir in 2 tablespoons unsalted butter and 1 teaspoon vanilla extract until smooth. Transfer pastry cream to a shallow bowl, press plastic wrap directly onto surface to prevent skinning, and chill in refrigerator until fully cold (at least 1 hour).

Soboro (Streusel Topping)

Prepare dry ingredients

In a medium bowl, combine 1 cup all-purpose flour, 1 cup granulated sugar, and a pinch of salt. If using, whisk in 1 teaspoon instant coffee or cocoa powder for flavor variation.

Cut in butter

Add 6 tablespoons cold unsalted butter, cut into small cubes. Use a pastry cutter, two forks, or your fingertips to work the butter into the dry mixture until it resembles coarse crumbs with some pea-sized pieces. Avoid melting the butter — the texture should be crumbly, not doughy.

Bind lightly with egg

Add 1 egg yolk and toss gently until the mixture holds together loosely in clumps (this helps the soboro form small crisp pieces when baked). If mixture becomes too wet, add a tablespoon more flour; if too dry, add a tiny drop of cold water.

Chill soboro

Place the soboro mixture in the fridge for 15 minutes to firm up (cold fat yields better crumb texture). Preheat oven to 350°F (175°C) while chilling.

Bake streusel

On a baking sheet lined with parchment, spread soboro in a thin layer or leave in loose clumps. Bake for 10–12 minutes, checking at 8 minutes, until pale golden and crisp. Allow to cool completely; break into small crumbly pieces. Alternatively, you can bake soboro directly on assembled buns (see assembly).

Prepare buns

If using unbaked dough: divide dough into eight 60–80 g portions, shape into rounds, place on a baking sheet lined with parchment. Let proof according to your dough recipe until puffy (about 45–60 minutes). If using pre-baked buns, split each bun crown horizontally or make a shallow pocket for filling. Preheat oven to 350°F (175°C) if not already heated.

Fill with custard

Transfer chilled custard to a piping bag fitted with a round tip (or use a spoon). Pipe or spoon about 2–3 tablespoons of pastry cream into the center of each bun (or into the pocket), leaving room on top for soboro.

Top with soboro

Generously sprinkle or press cooled soboro crumbs over the custard so that the top is well covered. If you baked soboro separately, simply press crumbs onto the custard. If you prefer a larger streusel topping, reserve some soboro clumps and place them on top of buns before a final short bake.

Optional final bake

For assembled unbaked buns: brush exposed dough with 1 tablespoon egg wash, then scatter soboro on top. Bake in 350°F (175°C) oven for 12–15 minutes until buns are golden and soboro is crisp. Remove and cool on a rack. For pre-baked buns, no additional baking is required.

Finish and serve

Let buns cool slightly. Dust with 1 tablespoon powdered sugar if desired. Serve at room temperature. Store leftovers in an airtight container in the refrigerator for up to 2 days (custard will soften the soboro over time).
