Method
Cold Brew Concentrate
Combine coffee and water
In a jar or pitcher, combine 0.75 cups coarsely ground coffee with 3 cups cold filtered water. Stir gently to make sure all grounds are saturated.
Steep
Cover the jar and steep at room temperature or in the refrigerator for 12 to 18 hours. Longer steeping (up to 18 hours) yields a stronger, more concentrated flavor.
Strain
After steeping, strain the coffee through a fine mesh sieve lined with cheesecloth or a coffee filter into a clean container. If necessary, strain a second time to remove fine sediment. The resulting liquid is cold brew concentrate.
Dilute for serving (optional)
If you prefer a less intense concentrate, dilute with cold water at a 1:1 ratio before using. This recipe assumes using roughly 3 oz concentrate for a 16 oz latte.
Latte Assembly
Prepare glass
Fill a 16 oz glass with 1 cup of ice.
Add sweetener and flavor
Pour 1 tablespoon simple syrup and 1/4 teaspoon vanilla extract (if using) over the ice. Stir briefly to dissolve and chill the syrup.
Add cold brew
Pour 3 oz cold brew concentrate over the ice and sweetener.
Add milk
Slowly pour 9 oz chilled milk over the cold brew so the drink layers slightly. If you prefer the drink fully mixed, stir gently to combine.
Finish and garnish
Taste and adjust sweetness if needed. Sprinkle a pinch (about 1/8 teaspoon) ground cinnamon or cocoa powder on top if desired. Serve immediately with a straw.
