Prepare Oven and Pans
Preheat oven to 350°F (177°C). Grease and line an 8-inch round cake pan (or two 6-inch pans) with parchment paper; set aside.
Whisk together the dry ingredients: in a medium bowl, sift or whisk 2 cups all-purpose flour, 2 tsp baking powder, and 1/2 tsp fine sea salt until combined.
Cream butter and sugar: in a large bowl or stand mixer fitted with the paddle attachment, beat 1/2 cup softened unsalted butter and 1 cup granulated sugar on medium speed until light and fluffy, about 3–4 minutes.
Add eggs and flavor: add 2 large eggs one at a time, beating well after each addition. Scrape the bowl, then beat in 2 tsp vanilla extract.
Bake the cake: pour batter into the prepared pan(s) and smooth the top. Bake at 350°F (177°C) until a toothpick inserted in the center comes out with a few moist crumbs, 25–30 minutes for an 8-inch pan (18–22 minutes for 6-inch pans). Let cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
Level and split: if making a layered presentation, when cooled, level the top with a serrated knife and split the cake horizontally to create two thin layers. If using two pans, use one cake per layer.
Spread filling: spread 1/2 cup lemon curd or raspberry jam evenly on the bottom layer, then replace the top layer. This bright, tart layer complements the sweet meringue "cloud."
Cloud Meringue Topping
Prepare equipment and ingredients: ensure the mixing bowl and whisk/beaters are completely clean and dry (any fat or water prevents meringue from stiffening). Bring 4 egg whites to room temperature.
Add sugar gradually: with the mixer running on medium-high, add 3/4 cup granulated sugar one tablespoon at a time, allowing each addition to mostly dissolve before adding the next. Add 1 tsp vanilla extract and 1 tsp light corn syrup (optional) toward the end of the additions.
Whip to stiff glossy peaks: continue whipping until the meringue reaches stiff, glossy peaks and the sugar is dissolved (rub a small amount between your fingers — it should feel smooth, not gritty). This can take 5–8 minutes depending on speed and temperature.
Bake or torch the meringue: there are two ways to achieve the cloud finish. Option A (baked cloud): spread or pipe the meringue over the assembled cake in billowy peaks. Place cake on a baking sheet and bake in a preheated 325°F (163°C) oven for 8–12 minutes until the meringue holds shape and is lightly golden on the tips. Option B (toasted cloud): use a kitchen blowtorch to gently toast peaks until evenly golden, without additional baking. If using torching, do so in a few-second passes until desired color.
Cool briefly: if baked, let the meringue set for 5–10 minutes before moving. If torched, allow 2–3 minutes for the surface to settle.
Finishing & Serving
Decorate: gently dust 1 tablespoon powdered sugar over the meringue if desired. Arrange 1 cup fresh berries and/or edible flowers around the base and on top to evoke a "cloud piece" — light, airy, and picturesque.
Slice and serve: use a sharp, hot (dip in hot water and dry) knife to make clean slices. Serve immediately after toasting/baking the meringue for the best contrast of warm toasted peaks and soft cake; meringue may weep over time if left too long.
Storage: store any leftovers loosely covered in the refrigerator for up to 2 days; note meringue will soften and weep, so for best texture enjoy within 24 hours. For longer storage, keep cake layers and meringue separate and assemble just before serving.
