Prepare equipment
Ensure your espresso machine (or stovetop Moka) is warmed up. Place a 12 oz (about 355 ml) cup on the espresso machine drip tray to preheat it by running a blank shot or pouring hot water into it, then discard the water. Have a metal milk pitcher (350–500 ml) and a steam wand or milk frother ready.
Espresso
Dose and tamp
Weigh 18 g of freshly ground espresso coffee (fine/espresso grind). Distribute evenly in the portafilter and tamp with consistent pressure to create a flat, even puck.
Brew
Brew a double shot of espresso into the preheated cup, aiming for about 55–60 ml of liquid in 25–30 seconds. If using a manual method (Moka), brew a stronger 60 ml concentrate and use similar timing for extraction.
Milk steaming & frothing
Pour milk into pitcher
Pour 170 ml of cold whole milk into the metal pitcher. The pitcher should be no more than half full to allow room for expansion while steaming.
Purge steam wand
Purge the steam wand for 1–2 seconds to remove condensation, then submerge the tip just below the milk surface.
Stretch milk (create microfoam)
Turn the steam on and lower the pitcher slightly so the wand tip sits just at the surface to introduce air for about 3–5 seconds. You should hear a gentle hissing sound. Then raise the pitcher so the tip goes deeper and continue heating. Aim for a silky microfoam with small, glossy bubbles. Monitor the pitcher by touch: stop steaming when the side of the pitcher feels just too hot to hold (around 60–65°C / 140–149°F).
Polish milk
After steaming, tap the pitcher firmly on the counter and swirl the milk to remove larger bubbles and integrate foam into a velvety texture. If you need extra foam (for a slightly drier cappuccino), spoon or pour an additional 30 ml of denser foam on top.
Assemble
Combine espresso and milk
Hold the cup with the brewed espresso at a slight angle. Begin pouring the milk from a height of 10–15 cm to combine liquid milk with the espresso, then lower the pitcher close to the surface and pour more deliberately to allow microfoam to sit on top. Aim for approximately equal parts: about 55–60 ml espresso, ~170 ml steamed milk, and ~115–120 ml of foam + liquid distribution to yield a 12 oz (355 ml) cappuccino with a thick foam layer.
Finish and garnish
Dust the top with about 1 tsp of cocoa powder or ground cinnamon. Add sugar to taste if desired (about 1 tsp). Serve immediately.
