Activate yeast (if needed)

If your yeast package recommends proofing, stir 1 cup warm water (about 105–110°F / 40–43°C) with 1 tbs sugar and 2 tsp instant yeast. Let sit 5–10 minutes until foamy. If using reliable instant yeast, you can skip and mix dry directly.

In the bowl of a stand mixer fitted with the dough hook, combine 4 cups all-purpose flour, 1 tsp salt, and 1 tbs granulated sugar. Mix briefly to combine.

Warm 1 cup whole milk until lukewarm (about 100°F / 38°C). Add the milk and either the proofed yeast mixture or 1 cup warm water plus 2 tsp instant yeast directly to the dry ingredients. Add 2 large eggs, and 4 tbs softened unsalted butter.

Mix on low speed until ingredients come together, then increase to medium and knead 6–8 minutes until dough is smooth, elastic, and slightly tacky. If dough is too sticky, add up to 2 more tablespoons of flour; if too dry, add up to 1–2 tbs water.

Transfer dough to a lightly oiled bowl, cover with plastic wrap or a towel, and let rise in a warm draft-free spot until doubled in size, about 60–90 minutes depending on room temperature.

Turn the risen dough out onto a lightly floured surface and punch down gently to release air. Divide dough into two equal portions for two loaves or keep whole for one larger loaf.

Shape each portion into a loaf or braid as desired. Place shaped loaves into greased 9x5-inch loaf pans or onto a parchment-lined baking sheet for a braid. Cover loosely and let rise a second time until puffy and nearly doubled, about 30–45 minutes.

Preheat oven to 350°F (175°C). If using egg wash, beat 1 egg and brush lightly over the top of each loaf. Sprinkle optional coarse sugar if desired.

Bake loaves at 350°F (175°C) for 25–35 minutes (braids may take 20–30 minutes) until golden brown and internal temperature reaches 190–200°F (88–93°C). If the top browns too quickly, tent with foil for the last 10 minutes.

Remove loaves from oven and immediately brush with 2 tbs melted butter for a soft, glossy crust. Transfer to a wire rack to cool until slightly warm (about 20–30 minutes) before filling with buttercream.

Buttercream Filling & Topping

While bread bakes or cools, prepare the buttercream. In a large bowl or stand mixer fitted with the paddle attachment, beat 1 cup room-temperature unsalted butter on medium-high speed until very pale and fluffy, about 3–4 minutes.

Reduce mixer speed to low and gradually add 2 cups powdered sugar, about 1/2 cup at a time, allowing it to incorporate. Scrape down the bowl as needed.

Add 2 tsp vanilla extract and 1 tsp fine salt. With the mixer on low, add 2 tbs heavy cream (or milk) and then increase speed to medium-high and beat 2–3 minutes until light, smooth, and spreadable. Adjust consistency: add more cream (1 tsp at a time) if too stiff, or add a little more powdered sugar if too loose.

If you want a flavored buttercream (citrus, coffee, cocoa), fold in 1–2 tbs of extract or 1–2 tbs sifted cocoa/paste at this stage and re-whip briefly.

Assembling Buttercream Bread

Once the loaves are cool enough to handle but still slightly warm (about 20–30 minutes after baking), use a serrated knife to slice into the loaf lengthwise to create a pocket for filling. For braided loaves, slice along the top center to open a cavity. Do not cut completely through; leave a hinge if you want a sandwich-style loaf.

Using a small offset spatula or piping bag fitted with a large round tip, fill the pocket with buttercream. Spread evenly but avoid overfilling so the loaf can be closed or the top will not collapse. Reserve 1/4 cup buttercream for topping if desired.

If you reserved buttercream, pipe or spread the remaining on top of the loaf for a decorative finish. Optionally sprinkle with pearl sugar, chopped nuts, or a light dusting of cocoa or cinnamon.

Let the assembled loaves rest 10–15 minutes for the buttercream to set slightly. Serve slices at room temperature. Store covered at room temperature for up to 2 days or refrigerate up to 5 days (bring to room temp before serving).

Optional Finishing

If you want a glossier finish, warm 1–2 tbs apricot jam with 1 tsp water, strain, and brush lightly over the top before applying reserved buttercream decorations.

For make-ahead: bake the loaves and freeze after cooling. Thaw completely, then fill with buttercream just before serving.
