Method

Prepare Anchovies

    Clean and Salt Anchovies

    Rinse the fresh anchovies under cold water and remove the heads and guts. Pat them dry with a paper towel and place them in a bowl. Sprinkle 1 tsp of salt over them and toss to coat. Let them marinate for about 30 minutes.

Make Salsa Verde

    Combine Ingredients

    In a medium bowl, mix together chopped parsley, basil, minced garlic, chopped capers, lemon juice, 4 tbs of olive oil, 1 tsp of salt, and freshly ground black pepper. Stir until well combined. Set aside.

Prepare Vegetables

    Chop Vegetables

    Halve the cherry tomatoes and dice the bell pepper into small pieces. Combine them in a bowl and set aside.

Toast Ciabatta

    Prepare and Toast Bread

    Slice the ciabatta loaf into 1-inch thick slices. Brush both sides with 2 tbs of olive oil. Preheat a grill or a skillet over medium heat and toast the ciabatta slices until golden brown and crisp, about 2-3 minutes per side.

Assemble and Serve

    Plate the Dish

    On a serving platter, lay out the marinated anchovies, spoon over the salsa verde, and arrange the chopped vegetables around them. Serve with the toasted ciabatta on the side.
