    Rinse the whole chicken under cold water and remove any giblets from the cavity. Pat dry with paper towels.

    Chop Vegetables

    Peel and chop the carrots and potatoes into large chunks. Slice the onion and celery into thick pieces. Mince the garlic.

    In a large pot, place the whole chicken and add the chopped carrots, potatoes, onion, garlic, celery, bay leaves, black peppercorns, and salt.

    Cover the ingredients with water (about 12 cups). Bring to a boil over medium-high heat.

    Simmer

    Once boiling, reduce the heat to low and let it simmer for about 1.5 to 2 hours, or until the chicken is cooked through and tender.

    Use a meat thermometer to ensure the chicken has reached an internal temperature of at least 165°F (75°C).

    Carefully remove the chicken from the pot and place it on a cutting board. Let it cool slightly before shredding the meat.
