Method

Preparation of Veal

  1. 1

    Prepare the Veal

Start by lightly pounding the veal cutlets between two pieces of plastic wrap until they are about 1/4 inch thick. This will help them cook evenly.

  2. 2

    Season and Dredge

In a shallow dish, combine the all-purpose flour, salt, and black pepper. Dredge each veal cutlet in the flour mixture, shaking off any excess flour.

Cooking the Veal

  1. 3

    Heat the Oil and Butter

In a large skillet, heat the olive oil and 1 tablespoon of unsalted butter over medium-high heat until shimmering.

  2. 4

    Cook the Veal Cutlets

Add the dredged veal cutlets to the skillet, cooking them for about 2-3 minutes on each side, or until they are golden brown and cooked through. Remove the cutlets from the skillet and transfer them to a plate.

Making the Sauce

  1. 5

    Sauté Garlic

In the same skillet, add the remaining tablespoon of butter and minced garlic cloves. Sauté for about 30 seconds until fragrant.

  2. 6

    Add Broth and Lemon Juice

Pour in the chicken broth and fresh lemon juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.

  3. 7

    Add Capers and Finish Sauce

Stir in the capers and let the sauce simmer for an additional 2-3 minutes to thicken slightly.

Serving

  1. 8

    Combine and Garnish

Return the veal cutlets to the skillet, coating them in the sauce. Cook for an additional minute to heat through. Garnish with chopped fresh parsley before serving.
