Broth Preparation

Prepare the Ingredients
Chop the carrots, celery, and onion into large chunks. Smash the garlic cloves but leave them unpeeled.

Simmer the Broth
Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and cover. Simmer for at least 2 hours, skimming off any foam that rises to the surface.

Strain the Broth
After simmering, strain the broth through a fine-mesh sieve into another pot or bowl, discarding the solids. The broth is now ready for use.

Rest the Dough
Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.

Prepare the Filling
In a mixing bowl, combine ricotta cheese and grated Parmesan cheese. Mix well until fully combined.

Roll Out the Dough
After resting, divide the dough into 4 pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.

Shape the Tortellini
Cut the rolled dough into squares (about 2 inches). Place a small spoonful of the cheese mixture in the center of each square. Fold the square into a triangle and press the edges to seal. Then, wrap the triangle around your finger to form a ring and pinch the ends together.

Cook the Tortellini
Bring the broth to a gentle boil. Add the tortellini and cook for about 3-5 minutes, or until they float to the surface and are tender.
