Broth

Method

Broth Preparation

  1. 1

    Prepare the Ingredients

Chop the carrots, celery, and onion into large chunks. Smash the garlic cloves but leave them unpeeled.

  2. 2

    Combine Ingredients

In a large pot, add the chicken bones, chopped carrots, celery, onion, garlic, bay leaves, black peppercorns, salt, and water.

  3. 3

    Simmer the Broth

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and cover. Simmer for at least 2 hours, skimming off any foam that rises to the surface.

  4. 4

    Strain the Broth

After simmering, strain the broth through a fine-mesh sieve into another pot or bowl, discarding the solids. The broth is now ready for use.

Tortellini Preparation

  1. 5

    Make the Dough

On a clean surface, create a mound with the flour and make a well in the center. Crack the eggs into the well and add salt. Slowly mix the flour into the eggs using a fork, until combined. Knead the dough for about 10 minutes until smooth.

  2. 6

    Rest the Dough

Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.

  3. 7

    Prepare the Filling

In a mixing bowl, combine ricotta cheese and grated Parmesan cheese. Mix well until fully combined.

  4. 8

    Roll Out the Dough

After resting, divide the dough into 4 pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.

  5. 9

    Shape the Tortellini

Cut the rolled dough into squares (about 2 inches). Place a small spoonful of the cheese mixture in the center of each square. Fold the square into a triangle and press the edges to seal. Then, wrap the triangle around your finger to form a ring and pinch the ends together.

  6. 10

    Cook the Tortellini

Bring the broth to a gentle boil. Add the tortellini and cook for about 3-5 minutes, or until they float to the surface and are tender.
