    Make the Dough

    In a large bowl, combine the all-purpose flour and salt. Make a well in the center, and crack the eggs into the well. Using a fork, beat the eggs gently, then gradually incorporate the flour until a dough begins to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-10 minutes until smooth and elastic. Wrap it in plastic wrap and let it rest for at least 30 minutes.

Chicken Filling

    Prepare the Filling

    In a large mixing bowl, combine the shredded chicken, ricotta cheese, grated Parmesan cheese, minced garlic, chopped parsley, salt, and black pepper. Mix until well combined.

Forming Tortelli

    Roll Out the Dough

    After resting, divide the dough into quarters. Roll out each quarter on a floured surface until thin, about 1/16 inch thick.

    Fill the Tortelli

    Cut the rolled dough into squares (about 3 inches). Place a teaspoon of chicken filling in the center of each square. Fold the dough over to form a triangle, sealing the edges tightly by pressing with your fingers.

Cooking the Tortelli

    Boil the Tortelli

    Bring a large pot of salted water to a boil. Carefully drop the tortelli into the boiling water and cook for about 4-5 minutes, or until they float to the top. Remove with a slotted spoon and set aside.

Papalina Sauce

    Prepare the Sauce

    In a large skillet, melt the butter over medium heat. Add the chopped onion and diced pancetta, cooking until the onion is translucent and the pancetta is crispy. Stir in the heavy cream and bring to a simmer. Add the grated Parmesan cheese and black pepper, stirring until the cheese has melted and the sauce is creamy.

    Combine with Tortelli

    Add the cooked tortelli to the skillet, tossing gently to coat them in the sauce. Cook for an additional 2-3 minutes to heat through.

    Prepare the Sauce

    In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant. Stir in the crushed tomatoes, salt, and black pepper. Simmer for about 15 minutes, stirring occasionally.

    Add the cooked tortelli to the sauce, tossing gently to coat. Stir in fresh basil leaves just before serving.
