Prepare Rice Mixture

    Cook the Rice

    In a medium saucepan, bring the vegetable broth to a boil. Add the arborio rice, reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is tender and the liquid is absorbed. Remove from heat and let cool.

    Sauté Aromatics

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.

    Combine Filling Ingredients

    Stir the sautéed onion and garlic into the cooled rice. Add the diced mushrooms, cubed mozzarella, chopped parsley, salt, and black pepper. Mix well until all ingredients are combined.

Prepare Breading

    Set Up Breading Station

    In three separate bowls, place the all-purpose flour, beaten eggs, and a mixture of breadcrumbs and grated Parmesan cheese.

Shape and Fry Supplis

    Form the Dumplings

    Take a small amount of the rice mixture and form it into a ball or oval shape, about the size of a golf ball. Repeat until all the mixture is used.

    Bread the Dumplings

    Roll each rice ball in the flour, then dip it into the beaten eggs, and finally coat it with the breadcrumb and Parmesan mixture. Ensure each dumpling is well-coated.

    Fry the Dumplings

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded dumplings in batches, frying until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.
