Preparing the Malfatti

    Prepare the Spinach

    In a large pot, bring water to a boil. Add the fresh spinach and cook for about 2-3 minutes until wilted. Drain and rinse under cold water to stop the cooking process. Squeeze out excess water and chop finely.

    Mix the Ingredients

    In a large mixing bowl, combine the chopped spinach, ricotta cheese, grated Parmesan cheese, flour, eggs, salt, black pepper, and nutmeg. Mix until well combined and a sticky dough forms.

    Shape the Malfatti

    Using your hands, shape the mixture into small dumpling-like shapes (about the size of a golf ball) and place them on a floured surface.

Preparing the Papalina Sauce

    Sauté the Garlic

    In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add the Tomatoes

    Add the crushed tomatoes to the saucepan along with chopped basil, salt, and black pepper. Simmer for about 10 minutes, stirring occasionally.

    Finish with Cream

    Stir in the cream and let it simmer for an additional 5 minutes. Adjust seasoning if necessary.

Baking the Malfatti

    Preheat the Oven

    Preheat your oven to 180°C (350°F).

    Bake the Malfatti

    In a baking dish, pour half of the Papalina sauce to coat the bottom. Place the malfatti on top, then pour the remaining sauce over them. Bake in the preheated oven for about 25-30 minutes until heated through and slightly golden on top.
