Method

Preparation of Calamari

    Clean the Calamari

    Rinse the calamari tubes under cold water. Remove any skin and innards, then cut them into rings or leave whole if they are small.

    In a mixing bowl, combine the chopped fresh parsley, basil, lemon zest, lemon juice, olive oil, minced garlic, salt, and black pepper. Mix well until all ingredients are combined.

    Marinate the Calamari

    Add the cleaned calamari to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and let it sit for 30 minutes in the refrigerator.

Skewering and Cooking

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. If using metal skewers, ensure they are clean and ready to use.

    Thread the marinated calamari onto the skewers, ensuring they are spaced evenly apart. You can alternate with slices of lemon or vegetables if desired.
