Cooking Pasta

Boil the Water
Fill a large pot with water and add a generous amount of salt. Bring to a rolling boil over high heat.

Cook the Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, typically about 8-10 minutes.

Reserve Pasta Water
Before draining the spaghetti, reserve about 1 cup of the pasta cooking water.

Drain the Spaghetti
Drain the spaghetti and set aside. Do not rinse the pasta.
Preparing the Sauce

Whisk the Eggs and Cheese
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
Cooking the Meat

Cook the Bacon
In a large skillet over medium heat, add the diced bacon or pancetta. Cook until crispy, about 5-7 minutes.

Combine with Spaghetti
Once the bacon is crispy, add the drained spaghetti to the skillet and toss to combine, allowing the pasta to absorb the flavors.

Taste and adjust seasoning with salt and more black pepper if needed. Serve immediately, garnished with extra Parmesan cheese and black pepper.
