    Ensure the salmon is fresh and sashimi-grade. Using a sharp knife, slice the salmon into thin, even slices. Aim for about 1/8 inch thickness for optimal texture.

    In a small bowl, whisk together the juice of the lemon and olive oil. Add salt and black pepper to taste. Set aside.
