Dough Preparation

    Make the Dough

    In a large bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Using a fork, beat the eggs gently, then gradually incorporate the flour until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Cook the Beef Filling

    In a skillet over medium heat, add olive oil. Once hot, add the chopped onion and garlic, sauté until translucent. Add ground beef, salt, and black pepper. Cook until the beef is browned and cooked through.

    Mix Filling Ingredients

    Remove from heat and let it cool slightly. Then mix in the beaten egg and grated Parmesan cheese until well combined.

Ravioli Assembly

    Roll Out the Dough

    Divide the rested dough into four pieces. Roll out one piece at a time on a floured surface until thin (about 1/16 inch thick).

    Shape the Ravioli

    Place small mounds of filling (about 1 tsp) on one half of the rolled dough, leaving space between each mound. Fold the dough over to cover the filling, and press down to seal. Cut into squares or circles using a knife or pasta cutter.

Cooking the Ravioli

    Boil the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 4-5 minutes until they float to the surface. Use a slotted spoon to remove them.

    Prepare the Sauce

    In a saucepan over medium heat, add olive oil and minced garlic. Sauté until fragrant. Add crushed tomatoes, salt, black pepper, and basil. Simmer for 10-15 minutes.

    Serve

    Toss the cooked ravioli in the sauce to coat. Serve hot with extra Parmesan cheese if desired.
