    Preheat the Oven

    Preheat your oven to 400°F (200°C) to ensure it is hot enough for cooking the potato skins.

    Prepare the Potatoes

    Wash the Russet potatoes thoroughly under cold water to remove any dirt. Pat them dry with a paper towel.

    Bake the Potatoes

    Place the potatoes on a baking sheet and bake them in the preheated oven for about 45-60 minutes, or until tender when pierced with a fork.

    Cool and Cut the Potatoes

    Once baked, remove the potatoes from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise and scoop out a portion of the flesh, leaving about 1/4 inch of potato around the skin.

Assembly

    Brush with Olive Oil

    Brush the inside and outside of each potato skin with olive oil. Sprinkle salt and black pepper over them.

    Add Toppings

    Fill each potato skin with shredded cheddar cheese and crumbled bacon. Place them back on the baking sheet.

    Bake Again

    Return the filled potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven, sprinkle with chopped green onions, and serve hot with a side of sour cream for dipping.
