Method

Cooking Pasta

  1. 1

    Boil Water

In a large pot, bring 4 liters of water to a boil. Add 1 teaspoon of salt.

  2. 2

    Cook Pasta

Add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Drain Pasta

Once cooked, drain the pasta in a colander and set aside. Reserve about 1 cup of pasta water.

Preparing the Sauce

  1. 4

    Sauté Garlic

In the same pot, heat 3 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

  2. 5

    Add Tomatoes

Add the halved cherry tomatoes to the pot and cook for about 5-7 minutes, until they soften and start to burst.

  3. 6

    Combine Pasta and Sauce

Add the cooked pasta to the pot with the tomatoes. Toss everything together, adding reserved pasta water a little at a time to achieve desired sauce consistency.

  4. 7

    Season

Add salt, black pepper, and fresh basil leaves. Toss again to combine, allowing the basil to wilt slightly.

Serving

  1. 8

    Plate the Dish

Serve the Poretti in bowls, topped with grated Parmesan cheese and optional garnishes like red pepper flakes and lemon zest.
