Method

For Pollo a la Brasa

  1. 1

    Marinate the Chicken

In a blender, combine the garlic, cumin, paprika, black pepper, salt, vegetable oil, lime juice, soy sauce, and oregano. Blend until smooth. Place the whole chicken in a large bowl and pour the marinade over it, ensuring it is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

  2. 2

    Cook the Chicken

Preheat your grill to medium-high heat. Remove the chicken from the marinade and let it come to room temperature (about 30 minutes). Place the chicken on the grill, breast side down, and cook for about 30 minutes. Flip it over and cook for another 30-40 minutes, or until the internal temperature reaches 165°F (75°C).

For Papa Frita

  1. 3

    Prepare the Potatoes

Peel the potatoes and cut them into thick strips. Soak the potato strips in cold water for at least 30 minutes to remove excess starch. Drain and dry them thoroughly with a kitchen towel.

  2. 4

    Fry the Potatoes

In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat. Once hot, add the potato strips in batches, being careful not to overcrowd the pot. Fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while still hot.
